a note from Camilla
I was born into a family where food and nutrition was at the core of our connection.
We always sat around the dinner table until our meal was finished - and were exposed to all kinds of foods and cuisines from a very young age.
My father is the quintessential hunter and gatherer, farmer, orchidist and restauranteur who to this day is fanatic about growing and foraging as many foods as possible - and both parents who valued the importance of health through eating delicious and fresh, unprocessed whole foods, an active lifestyle spent primarily outdoors, with a very strong ‘no junk’ policy - the latter something I wasn’t all that fond of then, but definitely appreciate now!

The privilege of this incredible upbringing on the banks of the Macquarie River is not lost on me - however it has instilled in me an understanding of food, seasonality, flavour and that the best way to influence your health outcomes starts with what you eat and having an understanding of where it comes from.
Australia has access to some of the best produce in the world - from our rich agricultural pastures and orchards to the sea, tropical through to arid climates - there is basically nothing that can’t be grown and sourced in this very lucky country. The hardest part is often knowing when to buy it, how to cook it it, and what to serve it with!

This fabulous produce is also overshadowed by the crazy world of large, fast-moving, consumer-driven, food processing companies who unfortunately tend to make our best, healthiest, and most nutritious foods seem unattainable and expensive.
I could bang on about this, going down the rabbit hole of the uneven power of multinational food & beverage companies who’ve benefited only from an ever increasing sedentary, convenience-comes-first society where obesity is more common than poverty - and the lack of government intervention around agriculture and junk foods. There are many varying opinions around this but one thing I know to be true is you can choose what you eat. You can prioritise health through nutrition and exercise. You can change your life through creating healthy habits that last a lifetime. All of these things can have a huge impact on not only how long you live, but more importantly your quality of life and how you feel every day.
